Smoked Salmon & Ricotta Pizzettas with Rocket

Preheat oven for up to 30 minutes before cooking pizzas or use a pizza oven to ensure a crisp result. For extra crisp pizza bases, place pizza bases directly on oven racks to cook.


  • 8 small pre-bought pizza bases
  • 250g Lemnos Organic Ricotta Cheese
  • 250g sliced smoked salmon
  • 1 small red onion, thinly sliced
  • 1 tbs baby capers
  • olive oil, for drizzling
  • 1 1/2 cups baby rocket leaves
  • 1 tbs olive oil, extra
  • 1 tbs red wine vinegar


  1. Bake pizza bases in a hot oven 220°C for 5-8 minutes until just crisp.
  2. Remove from oven and spread with ricotta. Top with salmon, onion and capers. Drizzle with a little oil and return to oven for 5 minutes.
  3. Toss rocket, oil and vinegar in a bowl to coat and divide between hot pizzettas. Serve immediately.
