Caramelized onion and Haloumi Tart

Try adding toasted Haloumi to your favourite burger or sandwich for added texture and flavour.


  • 1 sheet puff pastry, cut in half
  • 1 275g jar caramelized onion
  • 180g Lemnos Haloumi, grated
  • 250g punnet cherry tomatoes, halved
  • 1 egg, lightly beaten
  • 1 tablespoon fresh thyme leaves, plus extra sprigs to garnish
  • Mixed leaves and sliced red onion to serve


  1. Preheat oven 200C, grease and line 2 oven trays.
  2. Place 2 rectangles of pastry on each oven tray. Score a 1 cm border.
  3. Bake for 10 minutes. Remove from oven, push down gently on the centre of each. Brush edges with egg.
  4. Place ΒΌ cup caramelized onions on each pastry and spread to the border, top with halved tomatoes then sprinkle haloumi on top. Season. Top with thyme leaves
  5. Place trays back in the oven for 15 minutes or until tomatoes have softened and cheese has melted.
  6. Serve with mixed leaves, onion and extra sprigs of thyme.
