Beetroot, Rocket, Walnut and Lemnos Crumbled Fetta Salad

  • Preparation time: 10 minutes

Embrace your creative side with Lemnos Crumbled Fetta.

Ingredients:

  • 250 g precooked beetroot
  • 100 g rocket leaves
  • 80 g Lemnos crumbled fetta
  • 50 g walnuts
  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp seeded mustard
  • 1 tsp honey
  • salt and (pepper to taste)

Method:

  1. Combine extra virgin olive oil, white wine vinegar, seeded mustard, honey, salt and pepper to make the dressing
  2. In a mixing bowl combine the beetroot, rocket leaves, Lemnos crumbled betta and walnuts and dress the salad.
  3. Serve.
