These pies are ideal for picnics, and delicious hot or cold.
Preparation: 15 minutes
Cooking: 20 minutes
11/2 sheets frozen puff pastry, thawed
150g sliced premium leg ham, finely diced
6 eggs
200g packet Lemnos Smooth Fetta
1 egg, extra
2-3 tablespoons chopped chives
1 Preheat oven to 220°C (200°C fanforced). Lightly grease 6 individual pie tins (8cm base measurement).
2 Cut pastry sheets into 6 squares the same size, and place one in each pie tin; do not trim overhanging corners. Prick the pastry bases with a fork. Place pie tins on an oven tray.
3 Divide the ham between the cases, then crack 1 egg over the top of the ham. Season with black pepper. Stir together fetta, extra egg and chives; spoon mixture over the eggs.
4 Bake for 15 minutes or until eggs are set and pastry is firm and golden. Remove pies from the tins, place on the oven tray and return to oven. Continue baking for 3-5 minutes, or until pies are crisp on the bottom. |
