For a low-carb lunch, simply omit the pita bread and serve the cheese with remaining ingredients as a salad.

180g packet Lemnos Haloumi
1 tablespoon milk
1 teaspoon dried herbs
2 tablespoons plain flour
1 tablespoon olive oil
4 pita pocket breads
40g baby rocket
2 tomatoes, sliced
1 avocado, sliced
Green or black olive tapenade, to serve
1 Cut haloumi block lengthwise in half to make two 1cm-thick layers, then cut each layer crosswise in half. Dip pieces in milk, then combined herbs and flour.
2 Heat oil in a frying pan over moderately high heat. Add the haloumi and cook for 2 minutes each side or until golden brown.
3 Toast pita bread and cut a pocket opening at one side. Place haloumi in the pocket with rocket, tomato and avocado.
Serve with tapenade. |
