Tomato Stew with Fetta on Toast

Make tomatoes on toast something really special. Soften cherry tomatoes with herbs, olive oil and garlic, then crumble Lemnos Fetta into the pan in the last couple of minutes of cooking, and serve on thick sourdough toast.

Ingredients:

  • 2 punnets cherry or Heirloom cherry tomatoes
  • 180g pack Lemnos Traditional Fetta, drained and crumbled
  • 2 cloves garlic, crushed
  • 2 tbls extra virgin olive oil
  • 2 sticks of fresh thyme or ¼ tsp dried thyme leaves
  • ½ cup basil leaves, torn (optional)
  • sea salt and freshly ground black pepper
  • 8 slices sourdough bread, toasted and buttered

Method:

  1. In a medium frying pan on a medium heat add the olive oil, washed cherry tomatoes and thyme. Cook for about 3 minutes then add the crushed garlic. Cook for another 2-3 minutes until the tomatoes start to soften and burst.
  2. Sprinkle with crumbled Lemnos Fetta and fresh basil leaves (if your using them) and cook further for about 1 minute to combine the flavours.

Serve immediately on hot thick buttered toast.
