Haloumi Chicken with Basil & Prosciutto

  • Preparation time: 20 minutes
  • Cooking time: 25 minutes

When entertaining, serve chicken sliced on a large platter with accompanying vegetables. • Try using fresh oregano or thyme in place of basil. • Save time by purchasing grilled capsicums from the delicatessen or in a jar. • If prosciutto slices are small, use 2 slices of prosciutto per chicken fillet.

Ingredients:

  • 6 small skinless chicken fillets
  • freshly ground black pepper, to taste
  • 1 tbs olive oil
  • 180g Lemnos Haloumi, cut into 6 thick slices
  • 18 fresh basil leaves
  • 150g roasted red capsicum cheeks
  • 6 long thin slices prosciutto
  • olive oil spray
  • steamed green beans, for serving

Method:

  1. Cut a deep pocket in each chicken fillet and season well.
  2. Fill each fillet with a slice of Haloumi and 3 basil leaves. Top each fillet with a capsicum cheek and wrap in prosciutto to enclose.
  3. Heat a large non-stick frypan over medium-high heat, lightly spray chicken with oil and brown on both sides until golden. Transfer to the oven and bake at 180°C for 20 minutes or until chicken is cooked through.
  4. Rest chicken for 5 minutes before slicing and serving on a bed of steamed green beans.
